HAPPY NATIONAL WAFFLE DAY!

I know this isn't a food blog, but if you know me on a personal level, you know how much I enjoy making waffles for friends and family. This double belgian waffle maker has helped me make the biggest and fluffiest waffles for 6 years! Yes, you read that right! I've had it for 6 years and it has survived a few moves and a fatal fall down the stairs--I'm not exaggerating. Okay, now that you know which waffle maker I recommend, let's move on to the actual recipe.

My family and I rarely consume dairy, so I am going to share this vegan waffle recipe that in my opinion, tastes just as good as the original recipe. The waffles cook to a golden crips on the outside and the inside stays nice and fluffy! If you want a dairy and egg-friendly recipe, let me know! To replace the eggs I use ground flax seed mixed in water to create that runny, egg-like consistency. I was so excited to make these that I didn't grind the flax seeds as well as I should have, but this was no issue because the waffles tasted fantastic! Instead of milk I used almond milk, but any plant-based almond milk should work.

I hate when food bloggers take long to get to the actual recipe and instead share an incredibly long back story that barely has anything to do with the food itself. I feel that I am doing that to you right now, so I wont take you back to my childhood when I had my first waffle bite. I think I'm just excited to blog again since the pandemic started. Okay, okay, here is the recipe, for real this time.







Ingredients
3 1/2 Cups Almond Milk (or any plant-based milk)
2 Tablespoons ACV or regular Vinegar
1/4 Cup Ground Flaxseeds
1/2 Cup Water
4 Cups Flour
1/3 Cup Sugar
1 Teaspoon Cinnamon
1 Teaspoon Salt
2 Tablespoons Baking Powder
1/2 Cup Vegetable Oil (Coconut or Canola are fine)
2 Teaspoons Vanilla Extract

Instructions
1. Mix Milk & Vinegar and set aside to create vegan buttermilk.
2. Mix Flaxseeds and Water and set aside to create vegan eggs.
3. Preheat your waffle maker. Again, I love using this Cuisinart Double Belgian Waffle Maker because it cooks the waffles perfectly and clean up is minimal.
4. Mix your dry ingredients (flour, sugar, cinnamon, salt and baking powder).
5. Add wet ingredients to dry ingredients (milk with vinegar, flaxseeds with water, oil, and vanilla) and mix until combined.
6. Add batter amount according to your waffle maker's instructions.
7. Top your beautiful golden waffles with your favorites toppings.
8. ENJOY!

This recipe yields about 9 Belgian waffles. The pictures only shows 8 because Luna and I couldn't wait until after the photoshoot to have one.

  2. Perla, you look so pretty here!!! Waffles are the besttt. Unfortunately, we have yet to get a waffle maker lol, but I use a similar recipe when I make pancakes! Dairy-free and gluten-free is the way to go for sure xx
